ABC course of gelato

The ABC courses of gelato are hold at Telme’s facilities by professional gelato makers. The cost of the ABC course is euro 500,00 to subtract on purchase within a year.
Is accepted subscribers for a maximum of 15 people.
Intended students
Anyone that wants to know the basics to produce high quality fresh made gelato.
Books
The basic course follows the “ABC of fresh made Gelato” book by Roberto Giacobbi with copyright Gelato Seminar and it is given to the students at the end of the seminar.

Schedule
Please be on time, if necessary plan to arrive one night earlier.
Time: 9.00 to 12.30 / 14.00 to 18.00
First day:
- general considerations about homemade gelato.
- hygiene, basic ingredients and balancing a mix.
- mix treatment and use of the pasteurizer.
- questions and answers.
Second day:
- ageing, batch freezing, storage and displaying.
- recipes (white base, yellow base, syrups, etc).
- make and balance your own recipes.
- questions and answers.
